 「Small Batch(スモールバッチ)」とは、大手メーカーが中心の事業を小規模、少量生産で行うこと。イギリスのスコッチウイスキー、同イギリスやアメリカなどに多い地ビールなどが有名です。事業規模が小さいことを最大限に活かし、素材選びから製造方法にまでこだわったモノづくりが特徴です。

OUR STORY  :  私たちのチョコレートづくり

“SATURDAYS” は札幌生まれの「Bean To Bar」 Chocolateローカルブランドです。


 私たち「Saturdays Chocolate(サタデイズ チョコレート)」は、チョコレートをカカオの生豆から作る「Bean To Bar 」Chocolateの札幌ローカルブランド。

「Bean To Bar」(カカオ豆から全て手作りで仕上げるチョコレート)はNew York のMast Brothers Chocolate、San Francisco のDandelion Chocolateなアメリカから始まったムーブメント。「Small Batch」(小規模生産、手作り)、「Simple Recipe」(素材に拘り、活かすモノづくり)、生産者と消費者繋げる意味で「SDGs」(持続可能な開発目標)とのつながりの深いのが特徴。

「Bean to Bar」chocolateの特徴はワインや、コーヒーのサードウェーブ同様、産地や地域によって異なるカカオ豆の味や香り、フレーバーを楽しめること。

"Saturdays Chocolate" is Bean-to-Bar chocolate made and manufactured in downtown Sapporo.


 We started in the spring of 2015 and draw out inspiration from prestigious chocolate shops such as "Mast Brothers Chocolate" in New York City and "Dandelion Chocolate" in San Francisco.


★ What is "Bean-to-Bar"?

Our chocolate is made on site, "from bean to bar chocolate." Through the whole process of making chocolate, we are trying to express the real chocolate taste of the cacao beans and its characteristics. We want to lead people to a deep, delicious and interesting chocolate world.


 Single Origin Beans

We do not mix cacao beans from different locations, in order to achieve the specific flavor of certain type of beans. As a result, each bar has its own unique flavors with its own characteristics.


 Small Batch - Taking care in each process-

Handcraft : Bean to Bar makers start with different varieties of raw, high-quality cacao beans that are hand-selected by our team.

Roasting : Different types of beans require different temperatures and roasting time to draw out their specific characteristics. This is why we do "bean-to-bar," to ensure that we achieve the unique flavors and characteristics of each type of bean.

Conching, Blocking, and Aging : This process takes a very long time but it`s  important and necessary.


 Simple Recipe

Chocolate is similar to coffee, beer, or wine in that ingredients from different breed and growing district have a drastic effect on the flavors. This is the reason why our cacao beans are carefully sorted according to locations,

We only use 70% cacao and 30% cane sugar from Kagoshima. We do not use any artificial presevatives or ingredients, only pure and natural chocolate.


★ Factory Cafe

At Saturdays Chocolate Factory and Cafe, you can enjoy and taste our original chocolate as delicious drinks or sweets. Hot chocolate, Choco-presso, Choco-latte, brownie, whoopie pie,etc... We also sell raw cacao beans and cacao nibs.
